Direct heat control is essential. You need to watch and adjust in real time. Oven is impractical.

STOVETOPPan sear med-high 2-3 min/side.
Doesn’t melt — sears beautifully with golden crust. The crust IS the point. Direct pan contact is essential.

STOVETOPPan fry med 4-5 min, turn often. Or boil 5-7 min.
Pan fry for snap and char marks. Boil for classic plump texture. Both are fast stovetop methods.
Paneer

Same as halloumi — doesn’t melt, sears for a golden crust. Direct heat is faster and crispier.

Crispier crust from direct pan contact. Faster than oven. Press water out first either way.
